Hosted by Dame Amy Guittard, Senior Director of Brand Marketing and fifth generation in the Guittard family business her great-great-grandfather started in 1868. Amy will share her innate passion for cocoa and chocolate.
Dame Abigail Langlas - Chef and owner of Cake Works, instructor at Leeward Community College’s Culinary Arts Department, cake designer and pastry chef will demonstrate Mousse au Chocolat a L’Orange.
Dame Alexandra Leaf - Culinary educator and cookbook author with a specialty in chocolate and confectionary, will discuss the world of chocolate with a focus on today’s trends and production methods.
Dame Kathryn Gordon - Chef-Instructor in the professional Pastry & Baking program at the Institute of Culinary Education (ICE) in NYC, is a cookbook author and co-founder of Food Startup Help. She’ll demonstrate a quick chocolate tempering technique, as well as how to free-form pipe heart-shaped mendicants and decorate them with freeze-dried raspberries and strawberries, rose petals and gold leaf, in perfect time for Valentine’s Day.
